Traditional dairy foods have always played a pivotal role in the preservation of milk and promotion of its consumption among people. These products are endowed with enormous value and enjoy tremendous mass appeal. Realization has set in, albeit late, that these dairy foods also have economic potential for the organized industry. The globalization of dairy trade has further accentuated the need for directing scientific pursuits towards the recognition and promotion of the cultural significance attached to these traditional products. The International Conference on Traditional Dairy Foods being organized this year jointly by Dairy Technology Society of India and National Dairy Research Institute during November 14-17 at Karnal (India) is one significant step in this direction. The event will provide an appropriate forum for deliberating theoretical and practical issues that are critical for the manufacture, quality assurance and marketing of traditional dairy foods. The Conference will deal with novel technological aspects such as mechanized manufacture, marketing needs, emerging concepts and enhancement of functional attributes of traditional dairy foods without losing focus on their enormous cultural importance.

Dairy Technology Society of India is a forum dedicated to promote scientific discussion and exchange of ideas in the areas of Dairy Processing in general and Dairy Technology in particular. The co-host, National Dairy Research Institute, Karnal is India’s premier dairy research institution which has developed considerable expertise in dairy-related research and teaching over the eighty years of its existence. The Institute catalyses close interaction among scientists, students, farmers and dairy/food industry in such a way that each paves way for the other efficaciously. The contribution of the Institute in conducting, collating and coordinating research in dairying has received national and world recognition. Students from different parts of the world pursue their academic programmes at this institute.

On behalf of the Organizing Committee of the ICTDF 2007 we take great pleasure in inviting you to this conference. This mega event is expected to bring and knit together dairy and food scientists, academicians, industrialists, policy makers, farmers and students from all over the world to participate in the deliberations. The conference spread over four days will also have other concurrent activities. A large number of internationally renowned Dairy and Food Scientists will be delivering key note addresses, plenary lectures and technical oral presentations. Dairy Expo will host a large number of national and international companies involved in the manufacture of food processing equipment and machinery, analytical tools for dairy and food products as also for traditional Indian milk delicacies. Besides the oral presentations, there will also be a poster session to promote young and budding dairy researchers.
